Significant Day-Night Temperature Variation<\/strong> During the critical ripening period (July \u2013 August), the days are warm and sunny, while the nights remain cool. This notable temperature fluctuation allows the grapes to accumulate sugars and complex aromatic compounds during the day, while at night they preserve high natural acidity and develop fresh, refined aromas.<\/p><p dir=\"auto\"><strong>3. Perfect Harmony Between Climate and Soil<\/strong> The soils in Dafnes are mainly clay-sandy and limestone-based. They offer excellent drainage thanks to the sand, while the clay retains necessary moisture in the deeper layers. After the winter rains, the vines have access to controlled water throughout the long summer drought, without the need for frequent irrigation.
